Live from The Galapagos Islands - Shrimp & Fish Ceviche

A glimpse of the wonders of the Galapagos and Chef Wellington's (of the ship M/V Evolution) recipe for the best ceviche I've ever eaten.


Ingredients:

For Evolution Marinated Fish Ceviche:

1 1/2 lbs. white fish, diced

1 cup fresh lemon juice

1 1/2 teaspoons salt

2 tablespoons finely diced purple onion

1 tablespoon finely diced red and green bell peppers

1 stalk celery with leaves

1/2 teaspoon vegetable oil

2 tablespoons finely diced tomato

1 tablespoon freshly chopped cilantro

Popcorn for garnish

 

For Evolution Quick Shrimp Ceviche:

1 1/2 pounds shrimp, peeled and cleaned

1 cup shrimp water

1 1/2 tablespoons finely chopped red and green bell pepper

1 1/2 tablespoons finely chopped purple onion

1 tablespoon chopped fresh cilantro

1 1/2 tablespoons finely chopped tomato

3 tablespoons fresh lemon juice

1/2 teaspoon salt

2 1/2 tablespoons ketchup

1 teaspoon vegetable oil

Popcorn for garnish


Recipe:

For Evolution Marinated Fish Ceviche:

Place raw fish in medium bowl.  Add all remaining ingredients, mix well, cover and refrigerate 3 hours (keeps well for 1 1/2 days in refrigerator).  Serve with popcorn sprinkled on top.  Enough for 2 - 4.

 

For Evolution Quick Shrimp Ceviche:

Boil shrimp in water 5 minutes.  Place cooked shrimp in medium bowl and add 1 cup shrimp water.  Stir in remaining ingredients and serve immediately topped with popcorn.  Serves 2 - 4.
