A handful of ingredients. Ridiculously easy.
1 1/2 pounds chicken tenders
Juice of 1/2 lemon
1 teaspoon salt
1/2 teaspoon pepper
1 can (14 ounces) whole berry cranberry sauce
1/2 pound sliced sharp white Cheddar cheese
Preheat oven to 450 degrees F. Drizzle a little olive oil in a roasting pan and arrange chicken in single layer. Season with lemon juice, salt, and pepper and roast for 15 minutes.
Remove from oven and switch to broil. Spread cranberry sauce all over chicken and top with broken pieces of Cheddar. Broil for a few minutes until top is bubble and lightly browned. Transfer to a serving platter. You can serve them as an appetizer (for about 6 - 8 people), or for dinner as a main course.
