A very traditional recipe from this tiny French island. Can be eaten as is, or stuffed with anything, sweet or savory.
3 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 cup (more as needed) water
Vegetable oil for frying
Place flour, baking powder and salt in a large bowl. Mix with hands. Add 1 cup water and continue mixing with until dough is slightly sticky (you can add either more water or flour if needed). Remove from bowl onto a floured surface and divide into thirds. Roll each third into a log about 1 1/2" thick. Cut each log into 5 - 6 pieces.
Re-flour surface. Take each piece and knead a little. Form into smooth balls and place on floured dish. Let rest 15 minutes.
Heat a thin layer of vegetable oil in a large skillet. Flatten each biscuit and fry on both sides until golden brown (about 2 minutes per side). Place in paper-towel lined bowl to absorb oil. Makes about galettes. You can butter them and add jam - or stuff them with tuna or chicken salad - or just about anything you can think of.
