Hunks of corn-off-the-cob fried with a crunchy, spicy coating.
Spice mixture:
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 teaspoon granulated garlic
1/2 teaspoon salt
3/4 cup plain Panko bread crumbs
1/3 cup flour
2 - 3 eggs
Vegetable oil for frying
4 - 5 cobs of cooked corn (cold)
Combine spice ingredients in a small bowl. Put flour in another small bowl, and lightly beaten eggs in another.
Cut corn lengthwise, breaking into 3" pieces (or so). The corn 'crumbs' can be saved for a salad or corn muffins.
Heat 1" vegetable oil in a large skillet. Dip corn pieces first into flour, then eggs, then spice mixture. Fry in batches until golden brown (it will only take a minute or two). Drain on paper towels. Serves 6.
