Ribs poached in Guinness and grilled with a rich chocolate bitters barbecue sauce.
3 pound slab of ribs, halved
2 bottles (11.2 ounces each) Guinness beer, divided
1 small can (6 ounces) tomato paste
1/2 teaspoon red pepper flakes
2 tablespoons brown sugar
2 tablespoons chocolate bitters
Preheat oven to 375 degrees F. Place ribs in a large roasting pan, pour 2/3 of a bottle of Guinness over, cover with heavy goil and bake one hour.
Meanwhile, pour remaining beer into saucepan, along with the other beer. Bring to a boil and let boil until reduced by half (about 15 minutes). Remove from heat and stir in tomato paste, pepper flakes, brown sugar and butters.
Grill ribs, turning and basting with bitters sauce several times. Serves 2 - 4.
