Spaghetti-Spaghetti Squash with Artichokes

I love spghetti squash and I love spaghetti.  Put them together with artichokes and sun-dried tomatoes and you've got a winner.


Ingredients:

1 spaghetti squash

1/3 pound thin spaghetti

3 tablespoons butter

1 small onion, chopped

1 cup artichoke hearts in oil, coarsely chopped

1/3 cup chopped sun-dried tomatoes

1/2 teaspoon EACH salt and pepper

1 cup shredded Greyere cheese (Parmesan is fine, too).


Recipe:

Microwave squash 15 minutes, or until soft.  Halve lingthwise, remove seeds, and with a fork, 'shred' the squash.  Meanwhile, cook spaghetti according to package directions.  Drain and set aside.

Preheat oven to broil.  In a medium saucepan, melt butter and saute onions until soft.  Stir in artichoke hearts, sun-dried tomatoes and salt and pepper.  Fold in cooked spaghetti.  Top squash halves with filling and sprinkle on cheese.  Broil for a few minutes until cheese is golden brown.  Serves 2.
