Warm and wonderful with butterscotch whipped cream on top.
6 ripe nectarines, pitted and chunked
Juice of 1 liime
4 tablespoons butterscotch Schnapps, divided
1 cup flour
2/3 cup brown sugar, packed
1/2 cup quick-cooking oats
1/2 cup chopped pecans
1 stick (1/2 cup) cold sweet butter
1 cup heavy whipping cream
1 tablespoon sugar
Preheat oven to 375 degrees. Place nectarine pieces in a casserole dish. Squeeze lime juice over, then 2 tablespoons butterscotch schnapps. Make crumble: In a medium bowl, mix together flour, brown sugar, oats and pecans. Cut butter into small pieces and add to crumble. With hands, work the butter in until the mixture is crumbly. Pile on top of nectarines and bake 30 minutes, or until brown and bubbly. Meanwhile, whip cream in a medium bowl until soft peaks form. Add sugar and remaining butterscotch schnapps and whip until stiff. Allow crumble to cool slightly and serve with a big dollop of whipped cream on top. Serves 6 - 8.
