Romanian Baked Sauerkraut

The best saurerkraut I've ever had!  Inspired by a trip to Bucharest, it includes bacon, onion, apple juice and tomatoes.


Ingredients:

1 large onion, diced

6 slices bacon, diced

2 jars (24 ounces each) Bavarian sauerkraut, drained but not rinsed

1 can (14 1/2 ounces) diced tomatoes, juice and all

2/3 cup brown sugar

1 cup apple juice

1 1/2 teaspoons ground black pepper


Recipe:

Preheat oven to 350 degrees.  In a medium skillet, cook onion and bacon in a little butter until lightly browned.  Place sauerkraut in a large bowl.  Add canned tomatoes, brown sugar, apple juice and pepper.  Fold in onion-bacon mixture.  Place in a buttered 9" x 13" roasting pan.  Bake one hour.  Serves 8 - 10.
