Dominique's Pig Tail Stew

Join me and my friend Dominique in her St. Barth kitchen as she prepares a disgusting meal I have no desire to try.


Ingredients:

2 - 3 pounds pig tails, chunked

1 tablespoon olive oil

1 medium onion, chopped

1 medium tomato, chopped

4 cloves garlic, minced

1 small bunch fresh thyme

1 tablespoon chopped chives

6 cups red kidney beans (soaked in water overnight)

4 whole cloves

1/2 teaspoon pepper

1/2 habenaro pepper, chopped

4 strips thick bacon, diced

2 cups fresh pumpkin or butternut squash, chunked

1/2 teaspoon salt

1 bay leaf

For dumplings:

2 1/4 cup flour

1/2 teaspoon baking powder

1 cup water 

Optional:  Cooked white rice.


Recipe:

Place pig tail pieces in a pressure cooker over medium heat.  Add olive oil, onion, tomato, garlic, thyme, chives and 6 cups water.  Bring to a boil, add habenero, bacon, pumpkin, salt and bay leaf.  Cover and cook 35 minutes.

Meanwhile, make dumplings:  In a medium bowl, mix together flour and baking soda.  Add water and mix well.  Knead for five minutes on floured surface.  Let rest 35 minutes.  Cut slices and roll each one into 1/2" thick ropes, then 1/2" pieces.  Add to stew and let simmer 5 minutes.  Serve with rice.  Serves 6 - 8.
