A mouthful of flavors! Chocolate, coconut, raspberries, orange, toasted almonds..and a secret ingredient that makes it very special.
1 pint EACH chocolate ice cream and coconut ice cream
1 cup slivered almonds
1/2 cup freshly squeezed orange juice
1 1/2 cups raspberries (fresh or frozen)
1/2 teaspoon vanilla extract
1/2 teaspoon cayenne pepper
1/8 teaspoon salt
Preheat oven to 400 degrees. Allow ice cream to soften slightly at room temperature. In a medium-large bowl, combine ice creams and refreeze.
Spread almonds on a baking sheet and bake a few minutes, or until lightly browned. Set aside.
In a small saucepan, combine orange juice and raspberries. Cook over a medium flame for about 5 minutes, mashing the berries. Stir in vanilla, cayenne and salt. Remove from heat and let cool slightly.
Assemble sundaes: Ice cream, raspberry sauce and almonds. Serves 4.
