Old Man River Pecan-Crusted Catfish

A great recipe from the Old South (the cameraman really got into it).


Ingredients:

2/3 cup flour

1 1/2 cups chopped pecans

1 cup Panko bread crumbs

2 eggs

4 catfish fillets

1/2 cup vegetable oil

4 tablespoons butter

1 1/2 teaspoons salt

2/3 cup sour cream

Juice and zest from 1 lemon


Recipe:

Place flour in a small pie plate.  In another large pie plate, mix together pecans and Panko bread crumbs.  In another small dish, beat the eggs.  Dip each fillet first in the flour, then the eggs, then the pecan mixture.

In a large, heavy skillet, heat oil and butter until sizzling.  Brown catfish for about 7 minutes, flip and cook second side 5 minutes.  Remove to a platter and season with salt.  Mix together the sour cream, lemon juice and lemon zest and spoon on top of fillets.  Serves 4.
