Not COFFEE cake - Coffee CAKE. A two-layer coffee-infused cake with a coffee buttercream frosting.
1 box white cake mix
1 small box instant vanilla pudding
1 cup mayonnaise (low-fat is fine)
1 cup water
2 heaping tablespoons instant coffee crystals
3 sticks room temperature butter, chunked
5 cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons instant coffee crystals
1/4 cup milk
Optional: Chocolate-covered coffee beans for decoration.
Preheat oven to 350 degrees. In a large bowl, mix cake mix, pudding mix, mayo, water, eggs and coffee with an electric mixer (do not overmix).
Divide batter into to 8" cake pans that have been buttered and dusted with flour. Bake 30 - 35 minutes, or until done.
Allow cake to cool completely.
Make frosting: In a food processor, place butter, powdered sugar, extract and coffee. Blend until smooth. Add milk to make it a good spreading consistancy (add more if you need to). Place one cake layer on a pretty plate and spread frosting on top. Add the other layer and frost the whole thing. Decorate with coffee beans. Serves 8-10.
