Port Parfait with Oranges

Even if you don't like sweet wine, this Port reduction sauce is amazing with ice cream.


2 cups Port wine

Juice of 1/2 orange

1 1/2 oranges, peeled and diced

1 pint good French vanilla ice cream

1 cup heavy whipping cream, whipped

Unsweetened chocolate, grated for garnish


In a medium saucepan, bring Port to a boil and reduce heat to medium.  Simmer 20 - 25 minutes until reduced by half.  Remove from heat and stir in orange juice.  Allow to cool (sauce will thicken as it cools).

Place two scoops of ice cream in a parfait (or other) glass.  Drizzle about a tablespoon or Port sauce over, then a sprinkling of oranges.  Repeat.  Top with a mound of unsweetened whipped cream, some grated chocolate and a few orange pieces.  Serves 2.
