Oven-broiled walleye topped with a crunchy, cheesy coating.
walleye fillet, 2 - 2 1/2 pounds
1 cup white wine, divided
1/2 teaspoon EACH salt and pepper
1 slice bacon
12 finely crushed Saltine crackers
1/2 cup grated or shaved Parmesan cheese
1/2 teaspoon cayenne pepper
Preheat oven to broil. Drizzle a little olive oil in the bottom of a roasting pan. Place fillet in pan, tucking the tail under. Pour 1/2 cup of the wine over the top, season with salt and pepper, and lay strip of bacon on top. Broil 15 minutes (no need to turn).
Meanwhile, in a medium bowl, mix together Saltines, Parmesan and cayenne.
Remove fish from oven, rub bacon all over for more flavor, and top with Saltine mixture. Drizzle remaining 1/2 cup wine over the top. Return to broiler for about 5 minutes, or until cheese is melted and top is golden. Serves 4.
