Bull testicles
Flour
Black pepper
White pepper
Salt
Vegetable or peanut oil
Sauces such as barbecue, horseradish, ranch dressing, hot sauce
Rocky Mountain Oysters (bull testicles) can be purchased online ($15-$20 per pound). If not already sliced, slice into pieces about 1/4" thick. Season flour with peppers and salt to taste.
In a deep fryer or deep skillet, heat an inch of oil until it passes the sizzle test. Dip 'oysters' in flour mixture and fry until lightly golden, about 2 - 3 minutes. Do not overcook or they will be tough. Eat straight up, splashed with a little lemon, or with your choice of sauces. They're really tender, taste like chicken liver, and of course, are a real conversation piece.
