What a treat! And here is my latest, favorite version.
For each ice cream sandwich:
2 round toaster waffles
1 slice (1") butter pecan ice cream (Note: I buy round pints and slice right through the cardboard - they fit perfectly)
2 teaspoons caramel sauce
1/2 banana, thinly sliced lengthwise
Toast waffles and allow to cool. Place slice of ice cream on one, top with caramel and banana and place second waffle on top. Have napkins nearby. The flavor possibilities are endless!
