Lemon Tilapia with Smoked Salt

Quick, healthy and only four ingredients.  With music by Pat Dailey.


Ingredients:

8 - 10 tilapia fillets

4 teaspoons smoked salt (I like Alderwood)

1 - 2 teaspooons cayenne pepper

2 - 3 lemons, thinly sliced


Recipe:

Preheat oven to broil.  Coat the bottom of a roasting pan with olive oil.  Arrange fish, turning in oil.

Sprinkle about 1/2 teaspoon of smoked salt on each fillet.  Dust fillets with cayenne.  Arrange lemon slices on top and broil 15 minutes.  Remove from oven and press down on lemon slices with a fork for extra lemon flavor.  Discard rinds.  Serves 4 - 10 (it will be difficult to each just one fillet!).
