Pan-fried catfish smothered in a pepper-onion-sour cream sauce.
3 tablespoons EACH butter and olive oil
4 - 6 catfish fillets
1 teaspoon EACH salt and pepper
2 green bell peppers, sliced into rings
2 large onions, thinly sliced
1 pound sour cream
Heat oven to 375 degrees F.
Heat butter and oil in large oven-proof skillet. Add fish fillets and lightly brown over high heat, turning once. Season with salt and pepper. Remove to a plate.
Add peppers and onions to the skillet and saute over medium heat until tender, about 15 minutes. Season lightly with salt and pepper. Stir in sour cream. Push mixture to one side and return catfish to the skillet. Smother with the vegetable mixture. Bake 15 minutes. Serves 4 - 6.
