2 1/2 pound salmon fillet
1 1/2 teaspoons salt
1/2 cup brown mustard
4 garlic cloves, minced
3 tablespoons orange marmalade
4 tablespoons butter, melted
1/3 - 1/2 cup fresh dill, chopped
Preheat oven to 450 degrees F. Lightly oil a large baking sheet with sides. Place salmon in pan and salt. Roast ten minutes.
Meanwhile, in a small bowl, combine mustard, garlic and marmelade.
Remove salmon from oven and spread mustard mixture all over the top. Return to oven for 10 - 15 minutes more.
Mix together butter and fresh dill. When salmon is done, top with dill butter. Allow to rest a few minutes before transferring it to a serving platter. Serves 6.
