Two-Bite Peanut Butter-Pistachio Popcorn Balls

Irresistable nuggets of fun.


5 cups popped popcorn (I used microwave butter flavored)

2 cup chopped, salted pistachios

1/2 cup sugar

1/2 cup light corn syrup

1/2 cup smooth peanut butter

1/2 teaspoon vanilla extract


Place popcorn and pistachios in a large bowl.  In a medium saucepan, bring sugar and corn syrup to a rolling boil.  Remove from heat and stir in peanut butter and vanilla.  Pour over popcorn and stir until well coated.

When cool enough to handle, for into 1 1/2" balls and place on a baking sheet.  Allow to sit at room temperature until completely cooled and firm.  Makes about 50.  (I've also frozen them on a cookie sheet, transferred to a freezer bag, and had them on hand whenever needed).
