A de-constructed classic Italian Submarine Sandwich.
Dressing:
1/2 cup olive oil
1/4 cup vinegar (I used tarragon vinegar)
1 1/2 tablespoons brown mustard
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sugar
Salad:
1/2 head iceburg lettuce, coarsely chopped
2 tomatoes, chopped
1 small onion, chopped
1/3 pound Genoa salami, coarsely diced
6 slices Provolone cheese, diced
1/4 cup banana pepper rings
1/2 load unsliced Italian bread, cut into 1 1/2" - 2" chunks
3 tablespoons vegetable oil
1 tablespoon butter
1/4 teaspoon salt
In a medium bowl, whisk together all dressing ingredients. Set aside.
Place lettuce, tomatoes, onion, salami, Provolone and pepper rings in a large salad bowl. Pour dressing over and toss well.
In a medium skillet, toast bread cubes in oil and butter using tongs to turn frequently. Season with salt and scatter on top of the salad. Serves 6.
