Crispy Bacon-Wrapped Trout with a Mustard-Garlic Glaze
2 whole trout, gutted and patted dry
Salt and pepper
6 slices thin-cut bacon
1/2 cup mayonnaise
1/3 cup brown mustard
4 cloves minced garlic
Heat grill to medium high. Lightly salt the trout and give it a healthy sprinkling of black pepper. Thread on a long metal skewer through the mouth. Wrap three pieces of bacon around each fish. Place on grill. In a small bowl, combine mayonnaise, mustard and garlic. Brush on fish, turn and brush second side. Do this several times while grilling. The fish will be done in 12 - 15 minutes. Serves 2.
