A beautiful oven-roasted fillet with a crunchy sweet and tart sauce.
3 pound salmon fillet
olive oil
2 teaspoons EACH salt and pepper
4 cups apple cider
2 - 3 tablespoons apple cider vinegar
4 tablespoons butter, room temperature
1 cup finely chopped walnuts
Preheat oven to 400 degrees F. Place salmon on an thin layer of olive oil in a roasting pan. Roast about 30 minutes.
Meanwhile, pour apple cider in a medium saucepan. Bring to a boil and cook until reduced by a third (about 15 minutes). Add vinegar, butter and walnuts.
Place fillet on a serving platter and pour sauce all over. Serves 6 - 8.
