Only three ingredients! Delicious Italian dumplings fried in butter and topped with your favorite sauce.
3 eggs
1 container ricotta cheese (15 ounces)
1 cup flour
1/2 teaspoon EACH salt and pepper
Butter for frying
Your favorite pasta sauce
In a large bowl, beat eggs and ricotta cheese with an electric mixer. By hand stir in flour and salt and pepper (if you use an electric mixer, do not overmix!).
With a regular teaspoon, scoop up about 1/2 teaspoon of the dough. With another teaspoon, scrape it off into a pot of boiling water. Boil 6 minutes. Do it in three batches, so you don't crowd the pan. Remove each batch with a slotted spoon onto a plate and cover with a damp paper towel so they don't stick together.
Melt butter in a large skillet. Fry gnocchi until golden. Top with your favorite sauce. Serves 3 - 4.
