Guinness-braised baby back ribs with a deep, rich chocolate bitters sauce.
3 pound slab of baby back pork ribs, halved
2 bottles 11.2 ounces each Guinness beer, divided
1 small can (6 ounces) tomato paste
1/2 teaspoon red pepper flakes
2 tablespoons brown sugar
2 tablespoons chocolate bitters
Preheat oven to 375 degrees F. Place ribs in roasting pan and pour 2/3 of a bottle of Guinness over the top. Cover with heavy foil and bake one hour.
Make sauce: Pour remaining beer into saucepan, along with the other beer. Bring to a boil and reduce by half (about 15 minutes). Turn heat off and stir in tomato paste, pepper flakes and brown sugar. Add bitters.
Grill ribs, turning and basting with the sauce several times. Serves 2.
