Butterscotch Cake with Salted Coffee Frosting

A simple and delicious marriage of flavors.


1 box yellow cake mix

1 small box instant butterscotch pudding

1 cup water

1 cup mayonnaise

3 eggs

1 cup butterscotch morsels


6 tablespoons butter, softened

1 1/4 cup powdered sugar

1/2 teaspoon vanilla extract

1 1/2 tablespoons instant coffee crystals

About 2 tablespoons milk

Coarse salt


Preheat oven to 350 degrees F.  Butter and flour a 9" x 13" pan.

Put cake mix, pudding mix, water, mayonnaise and eggs in a large bowl.  Mix together with electric mixer.  Stir in morsels by hand.  Pour batter into prepared pan and bake 45 minutes.

Meanwhile, wash bowl and put butter, powdered sugar, vanilla and instant coffee in it.  Mix on low with electric mixer and add about 2 tablespoons milk, or until it's the consistancy you want.  NOTE:  If you're a frosting freak, double the amounts.

After cake has cooled, frost it right in the pan.  Sprinkle top with salt.  Cut into squares and arrange on serving platter.
