2 cups peanut butter
2 cups sugar
2 teaspoons vanilla extract
2/3 cup silken-style tofu
Preheat oven to 325 degrees. Butter two baking sheets. By hand, mix all ingredients well. Form 1" balls and place on cookie sheets 1 1/2" apart. Bake 20 minutes. Allow to cool somewhat before removing from pan. Makes 48.
